Matured in a single 100 L European Oak cask that previously held first-fill oloroso and second-fill Australian rum, this limited release balances notes of sweet raison, vanilla and Christmas pudding with toasted tobacco, white pepper and fresh nutmeg. Succulent, sweet and replete with deep characters that result only from triple distillation.

 

Mashbilll consists of:

  • 65% malted barley
  • 30% unmalted barley
  • 5% oats

 

Triple Distilled and non-chill filtered. Tasting notes (below) have been supplied by the distillery.

About the Distillery

Hunter Island Distillery, founded by Damian and Madeleine Mackey in Tasmania, stands out as Australia’s first producer devoted solely to the traditional Irish-style single pot still whisky. Drawing inspiration from Irish heritage, they craft their spirit using a mash bill of malted and unmalted barley plus oats, then triple-distill it in a custom copper pot still. The result is a creamy, spice-laced whisky that beautifully highlights Tasmania’s world-class barley and pristine maturation conditions. Each expression is aged in carefully selected oak casks—bourbon, port, sherry, and more—then patiently tested, tasted, and expertly married before bottling.

 

The core releases, including bourbon/port matured and cask-strength expressions, showcase a rich tapestry of flavors—from fruity and peppery to sweet oak and spice—with a velvety mouthfeel. Their pioneering poitín offers a glimpse into their new-make spirit. With Damian Mackey’s decades-long legacy dating back to his days at Shene and beyond, the distillery continues to grow, now preparing to open a permanent Hobart waterfront site with a cellar door and bar.
