French Oak Second Fill TD0416 was distilled in August of 2013 and decanted in December of 2024 maturing at 11 years and 3 months, in a single 300L French oak ex-tawny cask previously filled with an older batch of Sullivans Cove Single Malt Whisky.

 

Their French Oak Second-Fill casks have a history as rich as their flavour. Initially serving as first-fill ex-Tawny casks for an earlier batch of Sullivans Cove single malt, the best casks are then selected for a second round of maturation. This maturation style beautifully displays the rich character of the French oak, while allowing the distinctive spirit character of Sullivans Cove to take centre stage.

  • Colour: 
  • Nose: A soft, creamy bouquet of aromas bounces playfully from the glass - bright and cheery. Layers of vanilla custard, vanilla sugar, and cake batter lead the way, joined by sweet confectionery notes, brownie mix, maraschino cherry, and sticky plum jam. Light, fluffy, and irresistibly inviting, it’s a joyful and welcoming nose.
  • Palate: A lovely dry grip sets the foundation, with dense herbal notes weaving through - dried herbs, mint and parsley offering a savoury thread. This herbal lift pairs beautifully with sweet bursts of candied orange, lemon meringue, toffee apple, grape juice and marmalade, creating a dynamic and vibrant palate.
  • Finish: A lively citrus burst from the palate carries into the finish with short, zesty pops. A subtle coffee note emerges, building on the bittersweet theme before softening into a gentle wave of tropical fruits, coconut slice, and comforting notes of rice cake and rice pudding. A refreshing and satisfying close.
