This Single Cask Single Malt Australian Whisky was matured in a single 300 litre French Oak cask which had previously been used to hold and mature Tawny Port - this is the exact same combination used by Sullivans Cove's famous cask number HH0525 which was awarded "World's Best Single Malt" at the 2014 World Whisky Awards.

- Colour:
- Nose: A warm and inviting entry opens with notes of orange marmalade on toast and freshly baked sourdough bread, moving quickly to fruity-sweet complexities of peach, crushed strawberries, and yellow sherbet. After 14 years and 8 months of maturation, to be greeted by qualities of Sullivans Cove spirit (citrus, fruit) and grain is a wonderful thing, telling us that spirit and oak are in harmony here and this single cask has found a place of harmony and balance. As the whisky opens, the first inklings of French oak are released (toasty char and beguiling, sweet spice), and the nose travels gracefully between the elements with harmony and flow as the toasted, sweetly spied oak merges with golden kiwi as we move to the palate.
- Palate: An extremely seamless transition to the palate; the fruits are knocking at the door (kiwi leading the way) as the whisky swells with a soft and supple texture. Jammie Dodgers and rum & raisin ice cream meet lush notes of passionfruit and a slightly floral, malty nuance driven by buttered scones, dark chocolate chip muffins and vanilla buttercream. There is a gingery cola note that underpins the lot, and as the palate progresses, the French oak qualities deepen, giving an oak-driven weight to the back palate that creates further depth.
- Finish: The beguiling dark side of this single cask emerges upon transition to the finish. The Jammie Dodgers and dark chocolate chip muffins from the palate morph into cocoa, raisins, and continue to gain intensity, mingling with hazelnut to provide notes of Ferrero Rocher and hazelnut dark chocolate praline. More French oak spice is released (allspice, ginger) and distinctly Sullivans Cove citrus notes surface again creating an earthy chocolate/orange note. The finish trails off with long length and sweet, oaky, maple syrup.
