Double Cask DC118's youngest component was aged 6 years, and its oldest component was aged 18 years. Maturing in a combination of French and American oak, DC118 was bottled at 46% and yielded 1,115 bottles.
Sullivans Cove Double Cask epitomises the art of blending, created by Distillery Manager, Heather Tillott and the Sullivans Cove Distillery Sensory Team. This exceptional single malt whisky marries the distinctive qualities of French and American oak casks in every small batch. Adorned with both tropical and stone fruits, sweet notes of caramel and vanilla, spices such as cinnamon and nutmeg, plus nutty, floral and herbal nuances that all contribute to the intricate flavour profile. Double Cask offers unparalleled complexity and length, a testament to its meticulous craftsmanship.
Batch No. 118 of Sullivans Cove's "Double Cask" range contains whisky drawn from 10 casks, aged between 6 and 18 years. The youngest was filled on 26/08/2017 and they were decanted on 31/10/2024. The batch offers only 1,115 bottles and ours is number 853.

- Nose: A captivating bouquet that dances between sweet and savoury. Notes of ginger beer and toasted rye bread mingle with honey, vanilla, and the warm nuttiness of roasting chestnuts. Layers of nougat, hazelnut praline, and caramel toffee create an indulgent sweetness, balanced by earthy hints of leather, fresh mushrooms, and leafy undertones. Perfumed whispers of rose and orange blossom lift the profile, while currants, apple juice, fruitcake, and strawberry jam provide a rich and inviting complexity.
- Palate: A full body emerges with creamy texture and very well integrated oak. A subtle hint at a Tawny past life pokes its head around a corner, and disappears again to make way for a gorgeous spirit and oak marriage: red jellybeans, black cat lollies (anise!), bright sherbet, candied kumquat, dark cherries, ginger jam and a lovely herbal note of bay leaf.Silky and full-bodied, with a texture that glides effortlessly across the palate. Crisp Granny Smith apples evolve into tropical guava, lemon, pear, and quince, complemented by the sweetness of candied kumquats and lemon marmalade. Vanilla and a touch of warming spice – white pepper and nutmeg – provide depth, while a buttery shortbread note adds an elegant finish.
- Finish: A beautifully balanced and intriguing finish, where the fresh vibrancy of apples and kumquat marmalade melds with a saline character that highlights Sullivans Cove’s spirit. Notes of leather, roasted chestnuts, walnuts, and caramel toffee linger, with a subtle hint of red bell pepper kissed by a smoky barbecue, leaving a savoury and satisfying conclusion.
